Papaya salad: Ingredients



  •     120 g papaya
  •     120 g tomatoes
  •     280 g cooked white beans
  •     3 tablespoons parsley
  •     3 tablespoons olive oil
  •     1/2 vanilla pod
  •     salt and pepper

  •     Peel and dice the papaya and tomatoes.
  •     Rinse and drain the cooked white beans.
  •     Finely chop the parsley.
  •     Mix all ingredients in a bowl.
  •     Cut the vanilla in half lengthwise and remove the seeds.
  •     Mix the vanilla seeds with the olive oil and pour over the salad.
  •     Add salt and pepper to taste.
  •     Keep cool in the fridge until ready to serveServe cold, accompanied by a cereal (e.g. quinoa).
